🧺 Ingredients (1–2 servings)

Barli corn: as needed

Mayonnaise: ½ cup

Melted butter: 2 tablespoons

Fresh lemons (lemon juice): 2

Cotija cheese or feta: ½ cup, grated

Chili powder: 1 teaspoon

Chopped cilantro: to taste

Salt and black pepper: to taste

Olive oil: 1–2 tablespoons

Preparing the Corn

Place the barli corn in boiling salted water and cook briefly until slightly tender (about 5–7 minutes)

Remove from the water and let it cool slightly

Cooking the Corn

You have two options

On a grill or cast-iron pan
Place the corn over medium heat and turn it occasionally until lightly charred, with a few brown spots

Or in the oven
Bake at 200°C (400°F) for about 15–20 minutes, until fully cooked and golden

Making the Sauce

In a bowl, mix together

Mayonnaise

Lemon juice

Salt and pepper

Stir well until you get a smooth, creamy sauce

Final Topping

Brush the cooked corn generously with the sauce
Then top with grated cheese, chili powder, and chopped cilantro
Finish with a little melted butter and a few drops of lemon juice, then serve
