Barli Vegetable Koukou: 4 cups
(leeks, parsley, dill, cilantro)
Eggs: 4–5
Salt: 1 teaspoon (or to taste)
Black pepper: ½ teaspoon
Turmeric: ½ teaspoon
Chopped walnuts (optional): 2 tablespoons
Barberries (optional): 1–2 tablespoons
Flour or chickpea flour (optional): 1 tablespoon (for better binding)
Baking powder (optional): ½ teaspoon (for a fluffier texture)
Oil: as needed, for frying
👩🍳 Step-by-Step Instructions for Vegetable Koukou (Koukou Sabzi)
prepare and choose the right ammount ofthe Barli Vegetable Koukou (leeks, parsley, dill, cilantro)
Crack the eggs into a large bowl.
Add the Barli Vegetables, salt, pepper, turmeric, and optionally walnuts and barberries to the eggs.
Mix everything well until fully combined.
Heat a frying pan over medium heat and add a little oil.
Pour the Koukou mixture into the pan and smooth the surface.
Cover the pan and let one side cook completely until set and golden.
Flip the Koukou and cook the other side until done.
